Roasted Elephant Garlic
Ingredients:
4 heads Elephant Garlic
2 Red Peppers
Extra Virgin Olive Oil
Crackers or Crusty Bread
Directions:
Pre-heat oven to 350 degrees F.
Cut off the top of the garlic bulb.
Wrap the bulb in heavy aluminum foil and bake for about an hour.
Crostini w/ Herbed Goat Cheese and Wilted Spinach
Ingredients
6 ounces fresh goat cheese, room temperature
1 tablespoon lemon zest
2 tablespoons fresh chives, thinly sliced
1 tablespoon fresh, chopped, flat-leaf parsley
1 tablespoon fresh, chopped mint
2 teaspoons fresh, chopped oregano
1 teaspoon fresh, chopped thyme
salt and freshly ground black pepper
1 tablespoon extra virgin olive oil
1/2 pound spinach, washed and ends trimmed
6 slices rustic, country-style bread

NAPA CABBAGE
1 large head Napa cabbage
1 bunch green onions, chopped scalions
1 stick margarine
1 small jar seasame seed
2 pkgs. raman noodles (crush beforee removing from package Do not use
flavoring package).
1 pkg. sliced almonds
2 Tbs. sugar
Brown and cool margaine, seasame seeds, raman noodles, almonds and sugar
DRESSING
3/4 cup salad oil
1/4 cup red wine vinegar
1/2 cup sugar
2 Tbs soy sauce
Apple Berry Salsa with Cinnamon Chips
for Chips:
4 – 7 inch flour tortillas
1 tbsp sugar
1/2 tsp cinnamon
for Salsa:
2 medium Granny Smith apples
1 Kiwi
2 tbsp packed brown sugar
1 Cup strawberries
1 small orange
2 tbsp Apple Jelly
Antipasto Squares
Ingredients
2 pkgs of crescent rolls
1/4 lb each of:
Genoa salami
Large size pepperoni
Ham
Swiss cheese
Provolone cheese
Mozzarella cheese
1 medium size jar roasted red peppers
1 egg
1/4 c parmesan cheese, black pepper
Directions
Cheddar Potatoes
1 Bag of Hash Browns (frozen)
2 Cans of Cream of Chicken Soup
1 16oz Can of Sour Cream
1 Bag of Cheddar Cheese (2 Cups)
Cereal Topping – I like using Total
Mix all ingredients together, top with cereal and bake at 350 degrees for 45 minutes.
