Rolled Chicken Breast with Prosciutto & Asparagus
Well, I looked around the kitchen and had three ingredients, but didn’t know what I wanted to make: 1) Chicken breast, 2) Asparagus, 3) Prosciutto.
My original thought for dinner was to marinate the chicken in something and then grill them, then wrap the asparagus in the prosciutto and grille that… then make some potato dish.
Gnocchi Night – A success!
A couple of months ago, I was over our friend Mary I’s house and we were talking about, of all things, food! I mentioned how I made gnocchi with the kids and we had a great time doing it as a family… and Mary thought “ooh, let’s have a get together and make gnocchi”. Well, we did it and it was an absolute success!
Rib deliciousness
I want my babyback, babyback, babyback… ribs
I made ribs this week – they were so yummy! Best part was the leftovers – let me tell you.
To start, I took babyback ribs (pork) and hit them with a rub. I wrapped them in foil and stuck them in a bar-b-que stand thingy (do you like my technical lingo?).
A fun night out…
Eileen and I don’t get out much, with all that’s going on. So, we finally did get out and went to the St. Mary’s Fundraiser in Springfield last month. They do a silent auction and have a night of drinking and dancing, a really fun time! This year, we managed to win some nice gift certificates and a TON of cool toys (enough to last us for birthdays and even x-mas!).
What’s for dinner and what I was thinking when I made it
It’s funny what goes thru your mind when you’re cooking dinner…
First off, you might be asking, why am I making dinner at 1:48 in the afternoon… good question!
My schedule is basically killed from when the kids get off the bus (3pm) until past 7pm – today, yesterday – we didn’t get home until after 8:30pm… so tonight is a bit easy.
