A fun night out…

Eileen and I don’t get out much, with all that’s going on.  So, we finally did get out and went to the St. Mary’s Fundraiser in Springfield last month.  They do a silent auction and have a night of drinking and dancing, a really fun time!  This year, we managed to win some nice gift certificates and a TON of cool toys (enough to last us for birthdays and even x-mas!).

What’s for dinner and what I was thinking when I made it

It’s funny what goes thru your mind when you’re cooking dinner…

First off, you might be asking, why am I making dinner at 1:48 in the afternoon… good question!

My schedule is basically killed from when the kids get off the bus (3pm) until past 7pm – today, yesterday – we didn’t get home until after 8:30pm… so tonight is a bit easy.

Weeknight Pasta Bolognese

Sweet white wines such as Gewürztraminer, Riesling, and even white Zinfandel work especially well with this sauce. To obtain the best texture, be careful not to break up the meat too much when cooking it with the milk in step 4. With additional cooking and stirring, it will continue to break up.

Creamy Baked Four-Cheese Pasta

Serves 4- 6 as main course, 6-8 as a side

Bread Crumb Topping
3 – 4 slices white sandwich bread with crusts, torn into quarters
1/4 cup grated Parmesan cheese (1/2 ounce)
1/4 teaspoon table salt
1/8 teaspoon ground black pepper

Here¬s a recipe from “Gourmet Gazelle Cookbook” that
was printed in the “Washington Post” a couple months back. I
haven¬t tried it yet, but it sounds delicious! :-)
